This week has been weird. I had Monday off for Martin Luther King, Jr. Day, and then I got a call on Monday night letting me know that, because of a wind chill in the negatives, we’d have a two-hour delay on Tuesday. It’s nice to have some extra time to get stuff down around the apartment, but it also makes it so much more difficult to go back to work! I survived the work day, though, and the busyness of the evening afterwards
. Here’s what my eats looked like for Tuesday, January 22.

Breakfast (8:00 am)
One nice thing about a two-hour delay is the ability to sleep in. However, I wake up with Jordan’s alarm regardless of my schedule, so I watched “Gilmore Girls” in bed for a while before getting up for breakfast. I had oatmeal with peanut butter, cinnamon, dark chocolate , and a few Quaker oatmeal squares, with a cup of green tea on the side.
Lunch (12:40 pm)
Another nice thing about a two-hour delay? No 10:20 am lunch! It was so nice to eat lunch at…well… lunch time. I had a spinach salad topped with broccoli slaw, dried cherries, walnuts, apple cider vinegar and olive oil. Plus, a cup of Chobani Bite on the side.
Snack (2:00 pm)
I guess I didn’t pack enough for lunch (I’m so used to eating at 10:20 when I’m not very hungry), because around 2:00, my stomach started growling. I ate a Chocolate Dipped Coconut LUNA bar — my favorite flavor — to tide me over for the rest of the work day!
Snack (5:30 pm)
Jordan and I had a meeting to get to at 6, so I knew I needed to eat something before we left. I had no idea how long it would take, and I get pretty grumpy when I’m hungry. I had a piece of my sister’s homemade banana bread, slathered with butter.
Dinner (9:00 pm)
By the time we got home from our meeting, it was almost 9:00, and I knew that I needed to make something quick and easy. I don’t like eating much that late at night anyway, so I made a sweet potato, topped with a wedge of Laughing Cow Cheese and an egg.
Dessert (9:30 pm)
I was craving something sweet after dinner, so I decided to whip up this chocolate chip cookie for one. Don’t judge this cookie by its appearance — it was yummy!
Shortly after dessert, it was bedtime. I have a full day of work today, and I needed my beauty sleep to prepare for it!

oh geez, I would have been starving by 9! And lucky that you get a 2 hour delay! HAha that doesn’t happen much here in chicago… well at least not in law school!
Are those Chobani bites any good?
I think so! Not as thick and creamy at the regular sized cups, but they’re good for when I’m in a hurry!

Marty had the same schedule this week – Monday off and he had a two hour delay yesterday. He was definitely one happy camper (as it sounds you were too!)
Perks of being a teacher! As for your eats: That cookie looks SO good! I might have to whip one of those up the next time I’m in the mood for something sweet. It looks like a yummy, almost-baked cookie (which are my favorite kind!) Also, I still haven’t tried a sweet potato topped with an egg. I’m afraid that I won’t end up liking it and then I won’t be able to eat sweet potatoes anymore (a favorite food of mine)

Dried cherries or cranberries and walnuts or pecans are my favorite salad add ins.
I love banana soft serve at night, sometimes with a bit of almond butter mixed in!
You get a delay for cold weather? Jealous!
They said that kids could get frostbite within 30 minutes of standing at the bus stop, or something. I didn’t get paid for it, so I would’ve been okay with going into work two hours earlier

I live in So Cal, so it is rare to have bad weather. But I do sometimes shift around my workouts.

When I was in high school we had plenty of delays or snow days, but since I’ve been in college, we’ve only had two cancellations (in four years). But to be honest, I’d rather have nice weather than no school!
Oh, and that banana bread looks amazing!!
I haven’t tried Luna bars but have heard good things. I will need to give them a go and see if I like them.
